Eggstraordinary Omurice

Omurice (or Japanese ketchup fried rice) is one of the first recipes that I learned while living in Japan. Remember that every recipe for things is different, so this is the interpretation of Omurice that I always use.

Since Omurice was one of the first dishes that I learned to make, it always makes me nostalgic when cooking it and enjoying it. In fact, I might go make Omurice for dinner. Hopefully, this recipe will strike you like it strikes me, and it will end up in your weekly rotation for dinners.






Ingredients (1 serving):

1 chicken breast

1-2 cups of rice (check out my other blog post on how to make amazing sticky rice)

1/2 package of frozen veggies

1/2-1 yellow onion

2 eggs

Salt and pepper

Ketchup

Japanese Mayonnaise (optional but highly encouraged)




  1. You'll first want to cut up your onion (however you'd like it cut)

  2. Cook your onions in 1-2 tablespoons of oil in a medium-heat pan

  3. Cut your chicken into bite-size pieces

  4. Add your chicken in the pan with your onions

  5. Once the chicken is cooked, add the frozen veggies and rice

  6. When the veggies are cooked, add in ketchup and mix everything

  7. Put the rice mixture in a bowl

  8. In a separate bowl beat 2 eggs

  9. Add the eggs in a medium-heat pan with 1-2 tablespoons of oil

  10. Make sure the egg covers the bottom of the pan

  11. Cook the egg (don't scrabble)

  12. Add the egg on top of the rice mixture

  13. Add ketchup and Japanese Mayonnaise (mayo is optional, but highly encouraged)
